Chickpeas. Hummus. I used to love these. Several summers ago, the husband and I attempted to make our own hummus. Not only did we buy a mortal and pestle to crush the chickpeas and garlic but we failed to find any tahini at the local Giant, so we proceeded to make our own tahini. For those of you who aren’t familiar with it, tahini is a paste made from sesame seed and olive oil. All the recipes we found sounded so easy. We had no clue how hard it would be to actually crush sesame seeds with a pestle. Lesson learned: get a food processor.
After our first attempt at hummus turned into a 4-hour arm workout, we made a trip to the Crate and Barrel up the street from our apartment and bought a food processor. And so began weeks and months of homemade hummus. It wasn’t long before I was so sick of hummus, and chickpeas in general.
Until this summer, I came across a recipe on Pinterest that sounded pretty yummy. Now its a favorite. Quick, easy and tasty. Original recipe found on Two Peas and their Pod.
《ingredients》
2 Avocados
1 can of chickpeas {drained and rinsed}
1 lime {juice of}
1-2 scallions {chopped}
Handful cilantro {chopped, coarsely}
1/4 cup Feta cheese {crumbled}
Salt and pepper {to taste}
《directions》
Combine avocados, chickpeas, scallions, cilantro, lime juice and feta. Toss until mixed well. Season with salt and pepper. Enjoy!
